Skinny Recipe: Tangy Potato Salad

Ingredients
2 lbs red potatoes
1/2 Cup diced celery
1/4 Cup diced green pepper
1 Cup diced onion
1/2 Cup cottage cheese
1/3 Cup nonfat milk
1/8 TSP powdered mustard
1/4 TSP dried dill
1/4 TSP celery seed
1 TBSP white vinegar
1 TSP lemon juice
Directions
Boil the potatoes until tender, about 25 min. Let them cool slightly then cut into cubes. Toss the potatoes with the celery, green peppers and onion. Beat together the cottage cheese, milk, vinegar, lemon juice and spices. Toss the potato mixture with this dressing. Chill before serving.
