Skinny Recipe: Apple Pork Chops
The season is slowly changing and apples are now plentiful. Take advantage of these delicious treats and make apple pork chops for dinner tonight. Try them with a side of roasted sweet potatoes sprinkled with cranberries and a large salad with spinach or arugula and lemon vinaigrette.

Ingredients
2 Medium apples, suggest golden delicious
1 TSP canola oil or vegetable oil
4 Bone-in pork chops
1-1/3 Cup no-sugar added apple juice
3-1/2 TBSP ground mustard
1/3 Cup raisins
1/3 Cup chopped scallions
1 TBSP cornstarch
2 TBSP warm water
Directions
Core and slice apples 1/2 inch thick. Slice green onion.
Heat oil in a heavy nonstick skillet over medium high heat. Cook pork chops 2 minutes per side until browned. Season with salt and pepper to taste. Combine apple juice and mustard in a bowl and pour over pork chops. Reduce heat to low, cover and simmer 45 minutes.
Add apples, raisins and scallions. Cover and simmer another 5-10 minutes. Transfer pork chops and apples to a serving platter and keep warm.
Whisk cornstarch and warm water until combined with no clumps and gradually stir into apple juice liquid. Cook and stir until thickened. Serve sauce over pork chops and apples.
